Personally I am not a huge fan of pineapple. If I had to choose three fruits to eat for the rest of my life they would be watermelon, peaches, and mango. Those are my die hard fruits.
BUT last weekend pineapple took my taste-buds by surprise. I didn’t just have regular pineapple, but grilled. You’re probably thinking well what difference does putting a slice of pineapple on the grill make? Let me tell you, it makes all the difference.
This is the perfect summer dessert. Opt for two slices of this deliciousness instead of two slices of cake. It is loaded with natural nutrients that only do great things for your body! Skip the processed foods and enjoy a slice of grilled pineapple (literally cooked in 5 mins).Every season I find a recipe that I absolutely love and have that be my staple recipe for the season.Summer isn’t even halfway done but this pineapple is amazing!
This dish can either be served with the rest of whatever you’re grilling (ie. burgers, peppers, onions, etc.) or is great as a dessert!
2 tablespoons coconut oil (melted)
1 pineapple (sliced into rounds)
1. Preheat a stove-top grill or an outside barbecue
2.Brush each side of the pineapple rounds with coconut oil
3. grill each side of the pineapple for about 3 minutes, or until it is as charred as you like
